Electric Smoker Help

I've been using my Masterbuilt electric smoker more and more just because of convenience.  Not quite as good as the WSM but so much less work.  My main issue is I really have a tough time getting good smoke at lower temps, say 150-160 degrees.  I can get great smoke at 200-225, which is great for ribs and pork butts.  But, for summer sausage and other stuff that needs lower temp I am not happy with the smoke.  Any ideas or suggestions here?  Thanks!

My first thoughts would be the "size" of wood chips you are using.  The chunks tend to not work well in mine.  I do fine with the somewhat shredded and I know the father in law does real well with saw dust - not sure where he buys it.

do you soak ur wood chips in water over night then use them to smoke with?

Try this mixed with smaller shread wood and you will be just fine. The dust will get things going for low temps. Can also be used at higher temps for more of a flash smoke.

I've had the same problem with mine. Problem is that the unit stays warm inside with the burner off for extended periods of time. Then it's not on long enough to get the wood smoking. At first I was cracking the door to get cool air in and force the burner on. That worked, but then I figured out to not wet the chips at low temps. or a mix of damp and dry chips.

Here is another option that may solve your problem. Leave the "heater" in your box to your desiered temp and add this to get the smoke in. Buddy has one for an exclusive cold smoke box, usually does hams, bacon ect in it and it throws out the smoke.

Forgot to mention works awesome with cheese and fish also!

I've been using chips, not shredded.  I don't ever soak the chips.   Can't believe I did not think of using saw dust.  I will try that.

I am going to purchase one of those AMZN cold smoking setups, I have not had success with anything for cold smoking cheese.  From everything I have read it will be the ticket.

I've been buying my saw dust from Cole Papers. It's a lot cheaper than buying in the small bags. Just pour some water in the bag if it's been sitting a long time. It dries out and will burn like a match head. Their website lists it as 2.5 cu ft, which is 20-25lbs for under $30. I've used the hickory and the hickory maple blend with good results.

Contact Masterbuilt.My brother had the same problem with his.I believe they sent him a new smoker pan.Problem solved.Believe me they have had complaints and with the new smokers have fixed it.

You are going to find with any electric smoker that is not equipped with a smoke generator an inconsistency with producing smoke whenever the burner is not being powered.


To fix that problem a neighboring Minnesotan has come up with a solution; he calls it the A-MAZE-N smoker. http://www.amazenproducts.com/ 
It is a relatively inexpensive fix that will give you consistent, quality smoke for up to 11 hours, really takes a lot of the work out of smoking. The pellet model he sells smokes with wood pellets or wood dust.


I have tried other smoke generating set ups with out being fully satisfied, ecspecialy as I am with this method. I have a couple A-MAZE-N smokers and use them in both my electric Masterbuilts, also my propane smoker that is thermostatically controlled and in my charcoal Weber kettles when smoking with indirect heat; great product with customer service that is second none I have purchased from.

I have a masterbuilt electric smoker and I could not get it to smoke either. You need to call customer service and get a new wood chip pan. ( go to their website to get the number) They will send you an upgrade for free. This has made a world of difference in being able to smoke at low temps.
