Save the beef and pork for something else.  Sky-carp make great jerky alone.  Hi-country 3 pepper blend.  Add Worchestershire and crushed red pepper and enjoy.

When making goose jerky are you guys cutting into thin strips or do you grind it up?

Thin strips...use a fillet knife for better cuts.

Just made a batch lat week. Straight goose. Guys at work thought it was either beef or venison. When gound it has the same consistancy as beef(could add beef for bigger batch). 12 lg. breasts yielded 8# ground. I use Nesco brand regular and some pepper(to taste). Everyone seems to like it. I shoot and dehydrate,approx.1 hr. per tray @ 145 degrees. Whatever you choose, good luck and "HAPPY SNACKIN' "
